Recipes from the Ranch.
Here are some of the Recipes that we like. We thought it might be nice to share some of our favorites. I will try to update it with a new recipe or two when I can.

Apple Muffins 

1 1/2 c. Flour                                               TOPPING ( OPTIONAL )
3/4 c. Sugar                                                  1/2 C. Sugar
1/2 tsp, Salt                                                   1/3 C. Flour
2 tsp, Baking powder                                  1/2 C. Butter
1 Tbl Cinnamon                                          1 1/2 tsp Cinnamon                                 1 tsp Vanilla                              
1/3 c. Oil
1 Egg
1/3 c. Milk   ( I use Keir to keep them moist )
2 Apples chopped

Sift together flour, salt,sugar, baking powder and cinnamon.  Mix in oil, egg, vanilla and milk.   Fold in apples,  Spoon into muffin pan   In small bowl mix sugar, flour, butter and cinnamon topping, sprinkle onto batter and Bake.  
                   Bake @ 400 for 20 to 25 min for the big muffins

Lemon Sour Cream Pie

1 pie crust baked
1 c. sugar
3 Tbl plus 1 1/2 tsp cornstarch, ( we use arrow root powder )
1c milk
1/2 c. freshly squeezed lemon juice ( 2-3  lemons)
3 egg yolks lightly beaten
1/4 c. butter softened
1/2 Tbl lemon zest
1 c. sour cream
1c. heavy cream
2 Tbsp sugar

In a sauce pan combine the sugar and cornstarch, whisk in milk and fresh lemon juice.  cook over med heat stirring constantly , until mixture is thick and bubbly.  Reduce heat to low and cook 2 more min.  Add a couple of spoonfuls of the hot mixture to the egg yolks mixing well each time.  Poor egg mix into the saucepan and stiff well. Bring mixture to a gentle boil and cook 2 more min. Remove from heat add butter and lemon zest, stir until butter is completely melted. Allow mixture to cool completely , then stir in sour cream and pour into pie shell.
whip the cream and sugar.  Top the pie, chill and serve :)
